Pepparkakor (swedish ginger cookies)

Ingredients:
1/2 cupMolasses
1/2 cupSugar
1/2 cupButter
1 Egg, well beaten
2 1/2 cupSifted all-purpose flour
1/4 tspSalt
1/4 tspBaking soda
1/2 tspGinger
1/2 tspCinnamon
Procedures:
1Heat molasses in small saucepan to boiling point.
2The boil 1 minute.
3Add sugar and butter and stir until butter is melted.
4Cool.
5Beat in egg.
6Sift together flour, salt, soda and spices.
7Add to first mixture and mix thoroughly.
8Cover bowl tightly and chill overnight.
9Roll out a portion of the dough at a time on lightly floured pastry cloth.
10Roll out thin.
11Cut into desired shapes.
12Bake in a moderate oven (350) 6 to 8 minutes.
13Yield: 10 dozen cookies note: the dough may be shaped into a roll and wrapped in waxed paper.
14Chill thoroughly overnight or longer.
15Slice thin and bake in moderate oven (350).
16These should be stored in an air-tight container - allow flavor to "ripen"
