Ingredients:
2 lbsCatfish
1 tspSalt
2 Eggs, lightly beaten
1 cupAll-purpose flour
1/8 tspPepper
1 cupDry bread crumbs
Procedures:
1Heat oil to 375 degrees in deep fryer.
2Stir together flour, salt and pepper.
3Coat fish with the mixture; dip into eggs, then coat with the bread crumbs.
4Fry each piece for about 4 minutes or until golden brown.
5variation: prepare thin batter by mixing 1 cup all-purpose flour, 1 tsp baking powder, ?tsp salt, 1 cup milk and beat till smooth.
6Coat fish with flour mixture then dip into batter mixture.
