Ingredients:
1 packOkra, frozen, sliced (10 oz.)
1/3 cupBeef Frye drippings
1 cupGreen onions w/tops, chopped
1 cupCelery, diced
1 Clove garlic, minced
1/4 cupFlour
2 cupHot water
1 canStewed tomatoes (16 oz.)
Salt to taste
1/4 tspPepper
1 Bay leaf
Tabasco to taste
1 canSalmon (15 ?oz.)
1 dashFile' or to taste
1 1/3 cupCooked rice
Procedures:
1Thaw okra and saute in beef-frye drippings or veg.
2Shortening for 10 min. stirring occasionally.
3Add onions, celery, and garlic and cook abt.
45 min. more.
5Stir in flour.
6Add hot water, stirring constantly, and cook until slightly thickened.
7Add tomatoes, salt, pepper, and by leaf and cover.
8Simmer for additional 20 min. on low heat.
9Remove bay leaf and add tabasco sauce.
10De-bone and skin salmon and add to gumbo.
11Heat thoroughly.
12Add dash of file" just before serving.
13Serve in soup bowls or plates over hot cooked rice.
