Ingredients:
| 1
| pack | Okra, frozen, sliced (10 oz.) | | 1/3
| cup | Beef Frye drippings | | 1
| cup | Green onions w/tops, chopped | | 1
| cup | Celery, diced | | 1
| | Clove garlic, minced | | 1/4
| cup | Flour | | 2
| cup | Hot water | | 1
| can | Stewed tomatoes (16 oz.) | | | Salt to taste | | 1/4
| tsp | Pepper | | 1
| | Bay leaf | | | Tabasco to taste | | 1
| can | Salmon (15 ?oz.) | | 1
| dash | File' or to taste | | 1 1/3
| cup | Cooked rice |

Procedures:
| 1 | Thaw okra and saute in beef-frye drippings or veg. | | 2 | Shortening for 10 min. stirring occasionally. | | 3 | Add onions, celery, and garlic and cook abt. | | 4 | 5 min. more. | | 5 | Stir in flour. | | 6 | Add hot water, stirring constantly, and cook until slightly thickened. | | 7 | Add tomatoes, salt, pepper, and by leaf and cover. | | 8 | Simmer for additional 20 min. on low heat. | | 9 | Remove bay leaf and add tabasco sauce. | | 10 | De-bone and skin salmon and add to gumbo. | | 11 | Heat thoroughly. | | 12 | Add dash of file" just before serving. | | 13 | Serve in soup bowls or plates over hot cooked rice. |
