Fillets of bluefish gen patton

Ingredients:
4 eachBluefish fillets
1 pintWine, dry chablis
1 cupShallots, finely chopped
1/2 cupParsley, finely chopped
1/2 pintHeavy cream
1 tbspLemon juice
2 eachEgg yolks, beaten
1 xSalt and white pepper
Procedures:
1Place fillets in a buttered baking dish, sprinkle with shallots and parsley.
2Pour on the wine, dust with salt and pepper and bring to a boil.
3Cover the dish with oiled, waxed paper (or foil) and place in preheated 350 degree oven.
4Cook for 15 minutes.
5Now drain the juice from the baking dish into a saucepan, add the cream, the lemon juice, the beaten egg yolks and continue to stir this over the flame until it has reduced to thick consistency.
6Pour this over the fillets, which you have kept hot in a baking dish, and serve very hot.
7Also for: any tasty fish.
