Meat and potatoes meatloaf

Ingredients:
1 Onion, peeled
2 Potatoes
1 Carrot
2 lbsExtra-lean ground beef
2 Eggs -OR-
4 Egg whites -OR-
1/2 cupThawed egg substitute
1/2 cupNon-fat milk
1 tbspWorcestershire sauce (opt)
1 tspDried thyme or other herb
Salt or seasoned salt -AND-
Pepper to taste
Procedures:
1Put onion, potatoes and carrot through a shredder, or the fine shredding disk of a food processor (it"s not necessary to pare potato and carrot).
2Combine with remaining ingredients; mix well.
3Shape into a loaf on a non-stick baking sheet.
4Bake, uncovered, in preheated 350°F oven 1 hour.
5Makes 10 servings, 170 calories each
