Fried fish in spicy sauce

Ingredients:
1/4 cupOlive oil
1 1/2 lbsFish fillets
3/4 cupWater
2 Carrots -- thin sliced
2 smallOnions -- sliced
1 Green peppers -- cut in
Rings
1 Garlic clove -- minced
1 tbspPacked brown sugar
1/2 tspSalt
1/4 tspGround ginger
1/3 cupCider vinegar
2 tspCornstarch
Procedures:
1Cut fish fillets into serving-sized pieces.
2Pat dry.
3Heat oil in skillet over medium heat.
4Add fish and cook until fish flakes easily with fork; turning carefully.
5Will take 8-10 minutes.
6Heat water, carrots, onions, green pepper, garlic, brown sugar, salt and ginger to boiling.
7Cover, reduce heat and cook for about 5 minutes.
8Mix vinegar and cornstarch; stir into vegetables.
9Heat to boiling, stirring constantly.
10Boil 1 minute, then pour over fish.
