Fried oysters with chili corn sauce-brennan's

Ingredients:
3 cupHeavy cream
2 tbspButter
1/2 Poblano chili or pasilla
1/2 Red bell pepper
1/3 Onion
1 largeEar of corn
2 Garlic cloves -- minced
2 tbspTequila
2 1/2 tbspChili powder
2 tspGround cumin
1 dashSalt
1 dashFresh ground pepper
1 dashCayenne pepper
24 Shucked oysters
Vegetable oil - deep frying
1 cupInstant masa mix
1 cupAll purpose flour
2 1/2 tbspCajun Seasoning

OYSTERS
Procedures:
1~----------------sauce-------------------------- cook cream in heavy large saucepan over medium heat until reduced to 1 ?cups, stirring occasionally, about 20 minutes.
2Set aside.
3Julienne the chili, red pepper and onion.
4Scrape kernels off the ear.
5Melt butter in heavy medium skillet over low heat.
6Add chili, bell pepper, onion, corn and garlic and saute until slightly softened, about 4 minutes.
7Transfer vegetables to bowl.
8Add tiquila to skillet and bring to boil, scraping up any browned bits.
9Mix in reduced cream, vegetables, chili powder and cumin.
10Season with salt, pepper and cayenne and simmer until thickened to sauce consistency, about 5 minutes.
11Keep warm in top of double boiler over warm water.
12Heat oil in deep fryer or large skillet to 375°F.
13Combine masa mix, flour and 2 ?tbsp. brennan"s cajun seasoning mix in medium bowl.
14Dredge oysters in mixture.
15Add oysters to oil in batches and fry until golden brown, about 1 minute.
16Transfer to paper towels using slotted spoon and let drain.
17Serve, passing sauce separately.
