Grilled salmon fillets in lettuce with mustard sauce

Ingredients:
4 (4 to 6-oz) salmon fillets
3 tbspLemon juice
2 tbspWhite wine
4 tbspOlive oil
3 tbspCapers
1/4 tbspDry mustard
Salt
16 Green leaf lettuce leaves
MUSTARD SAUCE
2 tbspButter or margarine
1 1/2 tbspFlour
1/4 cupVinegar
1/4 cupBoiling water
1/2 Bouillon cube
1/4 cupDry mustard
1 tbspSugar
1 Egg, beaten
Procedures:
1To prepare salmon, rinse with cold water.
2Pat dry with paper towels, and set aside.
3Combine lemon juice, white wine, olive oil, capers and ?teaspoon mustard.
4Season to taste with salt.
5Pour over salmon and marinate 30 minutes, turning once.
6Reserve marinade.
7Blanch lettuce leaves in boiling water 5 seconds.
8Drain well.
9Arrange 2 leaves with stem ends overlapping at center.
10Spoon about 2 teaspoons marinade over lettuce.
11Place 1 salmon fillet on lettuce.
12Top with 1 or 2 more teaspoons marinade, including some of capers.
13Roll fillet up.
14Place 2 leaves on top and tuck edges under fish.
15Bring up bottom leaf edges.
16Tie package-style with string.
17Repeat with remaining lettuce, marinade and fillets to make 4 packages in all.
18Set aside.
19To make sauce, blend butter and flour in top of double boiler until smooth.
20Add vinegar, boiling water, bouillon cube half, ?cup mustard, sugar and egg.
21Cook and stir over hot water until sauce thickens, about 10 minutes.
22Keep warm.
23Place salmon bundles on well-greased grill 4 to 5 inches from hot coals and cook 5 to 6 minutes.
24Turn and cook an additional 5 to 6 minutes.
25Remove string and serve with mustard sauce. ~--
