Grilled rainbow trout with asian flavors

Ingredients:
4 6-oz rainbow trout fillets
1 tbspGinger root
1 tspGrated lime peel
1/4 cupSafflower oil
1 tspCrushed red pepper
2 tbspLime juice
Salt, to taste
Procedures:
1In a medium bowl, saute ginger in oil just lightly browned and aromatic.
2Remove pan from heat; stir in red pepper.
3When oil cools completely, whisk gradually into lime juice and peel.
4Set aside.
5Heat grill and brush with oil.
6Grill trout flesh side down 2 minutes.
7Gently turn.
8Grill for 2 more minutes, or until trout turns opaque.
9Serve immediately with lime-ginger mixture.
