Ingredients:

| | 6-oz rainbow trout fillets | | 1
| tbsp | Ginger root | | 1
| tsp | Grated lime peel | | 1/4
| cup | Safflower oil | | 1
| tsp | Crushed red pepper | | 2
| tbsp | Lime juice | | | Salt, to taste |

Procedures:
| 1 | In a medium bowl, saute ginger in oil just lightly browned and aromatic. | | 2 | Remove pan from heat; stir in red pepper. | | 3 | When oil cools completely, whisk gradually into lime juice and peel. | | 4 | Set aside. | | 5 | Heat grill and brush with oil. | | 6 | Grill trout flesh side down 2 minutes. | | 7 | Gently turn. | | 8 | Grill for 2 more minutes, or until trout turns opaque. | | 9 | Serve immediately with lime-ginger mixture. | | 10 | Serves (a national fisheries institute calendar recipe). |
