Ingredients:
INGREDIENTS
2 cupLean ground round (15% fat)
1 tbspSalt
3/4 cupInstant rice
1 cupWater
DIRECTIONS
1/4 cupPrepared bread crumbs
1 1/2 cupButtermilk
1 tbspDiet margarine
1/2 tbspArrowroot
Procedures:
1Mix beef, crumbs, salt, ?cup buttermilk, and rice.
2Shape into two dozen meatballs (about 1" thick).
3In large skillet, brown meatballs in margarine on all sides; pour water over; cover tightly.
4Boil until rice is tender and meat is cooked (about 30 minutes).
5Remove from skillet.
6Mix remaining 1 cup buttermilk with arrowroot to form smooth paste; stir into liquid remaining in skillet.
7Stirring constantly, cook until gravy is thick (do not boil).
8Return meatballs to pan and gently heat.
9Serve with gravy
