Gulf coast fried shrimp

Ingredients:
2 lbsUnpeeled medium-size fresh
- shrimp
4 largeEggs, beaten
2/3 cupCommercial spicy French
- salad dressing
1 1/2 tbspLemon juice
3/4 tspOnion powder
Vegetable oil
1 1/3 cupCrushed saltine crackers
2/3 cupCrushed corn flakes cereal
1/3 cupWhite cornmeal
Procedures:
1Peel shrimp, leaving tails intact; devein if desired.
2Place shrimp in a large shallow dish.
3Combine eggs and next 3 ingredients; pour over shrimp, stirring gently.
4Cover and marinate in refrigerator 3 hours, stirring occasionally.
5Pour oil to depth of 2 inches into a dutch oven; heat to 375 degrees.
6Combine cracker crumbs, cereal and cornmeal.
7Remove shrimp from marinade, discarding marinade.
8Dredge shrimp in cracker mixture, and fry, a few at a time, until golden.
9Drain.
