Ingredients:

| | Schmaltz herring | | 2
| | Onions | | 1
| cup | Vinegar | | 1/2
| cup | Water | | 3
| tbsp | Sugar (to taste) | | 1
| cup | Sour cream | | 1
| tbsp | Whole pickling spice | | | (optional) |

Procedures:
| 1 | Soak herring whole overnight. | | 2 | Remove skins and entrails. | | 3 | Filet herring and cut into pieces; or cut into slices through bone. | | 4 | Place herring in jar in layers alternating with sliced onions. | | 5 | Combine vinegar, water, sugar and sour cream. | | 6 | Pour over herring. | | 7 | Store in refrigerator for a day or two before serving. | | 8 | if you like it sweeter, add more sugar; sour, add vinegar. | | 9 | If you wish, omit sour cream in the pickling liquid. | | 10 | Instead, add it to the drained, pickled herring when ready to serve. | | 11 | A tbs of whole pickling spice added to the marinade adds zest. |
