Italian-style steamed mussels

Ingredients:
4 lbsFresh mussels
1/4 cupOlive oil
1/2 cupChopped onions
4 Cl Garlic, finely chopped
1/2 cupGreen pepper, chopped
2 cupTomato wedges
1/2 cupWhite wine
Parsley sprigs, for garnish
Procedures:
1Remove beard and discard.
2Rinse mussels in cold water, discard broken or opened mussels.
3Saute onion, garlic, and green pepper in olive oil in a wok over medium heat for 30 seconds.
4Add mussels, tomatoes, and wine.
5Cover and cook for about 4 minutes (until mussels open).
6Shake pot occasionally while cooking.
7garnish with parsley.
