Ingredients:

| lbs | Mackerel | | | Salt & pepper to taste | | 1
| each | Lemon | | 4
| tsp | Garlic, chopped | | 4
| tsp | Onion, chopped | | 2
| tbsp | Parsley, chopped | | 2
| tsp | Green pepper, chopped | | 1
| cup | Oil | | 1
| lbs | Tomatoes, peeled, strained | | 1/2
| cup | White wine |

Procedures:
| 1 | Clean & wash fish; season with salt & pepper. | | 2 | Place in pan. | | 3 | Squeeze lemon over fish, then refrigerate for 30 min. sprinkle garlic over fish, then onion, parsley, and green pepper. | | 4 | Pour oil over all, then add tomatoes. | | 5 | Bake in preheated 250°F. oven for 15 min. add wine. | | 6 | Baste fish with pan sauce, and bake 30 min. longer, until most of the liquid is absorbed. |
