Kolio fourno (baked mackerel)

Ingredients:
3 lbsMackerel
Salt & pepper to taste
1 eachLemon
4 tspGarlic, chopped
4 tspOnion, chopped
2 tbspParsley, chopped
2 tspGreen pepper, chopped
1 cupOil
1 lbsTomatoes, peeled, strained
1/2 cupWhite wine
Procedures:
1Clean & wash fish; season with salt & pepper.
2Place in pan.
3Squeeze lemon over fish, then refrigerate for 30 min. sprinkle garlic over fish, then onion, parsley, and green pepper.
4Pour oil over all, then add tomatoes.
5Bake in preheated 250°F. oven for 15 min. add wine.
6Baste fish with pan sauce, and bake 30 min. longer, until most of the liquid is absorbed.
