Lobster in wild watercress dressing

Ingredients:
1/2 cupFresh laurel (bay leaf)
1/2 cupFresh chervil
1/2 cupFresh sorrel
1/2 cupFresh tarragon
1/2 cupFresh basil
1/2 cupFresh fennel
1/2 cupFresh Italian parsley
1 cupWhite vermouth
1 (2- to 3-lb) lobster
WILD WATERCRESS DRESSING
1 Sprig chervil
1 Bunch wild watercress *
1/2 Sm. Spanish onion, chopped
1/4 cupChardonnay wine vinegar
1 Egg yolk
1/4 cupOlive oil
Salt
Fresh. ground white pepper
1 Tomato, julienned
1 Yel.bell pepper, julienned
1 Red bell pepper, julienned
Additional fresh herbs
Procedures:
1*note:if any of the fresh herbs called for are not available, choose any seasonal herbs desired.
2**watercress (upland watercress) should have stems trimmed.
3Scatter herbs in bottom of large saucepan.
4Add white vermouth.
5Top with lobster.
6Cover and bring to boil.
7Steam until lobster is done, about 20 to 25 minutes.
8Meanwhile, to make dressing, in food processor or blender, combine chervil, watercress, onion, wine vinegar, egg yolk, olive oil and salt and pepper to taste.
9Blend until mixture is emulsified, being careful not to blend too much or dressing will separate.
10Set aside.
11Remove lobster from pan.
12Crack shells and claws (if any).
13Pour some of watercress dressing on bottom of platter.
14Arrange lobster tail and claws over dressing.
15Combine tomato and yellow and red peppers.
16Toss with remaining dressing.
17Place around lobster.
18Garnish with additional herbs.
