Ingredients:
2 1/2 lbsSalmon fillets
2 tbspSugar
2 tbsp+2 tsp kosher salt
1 tbspHickory smoked salt
Procedures:
1Mix dry ingredients and rub over salmon.
2Put salmon in a double plastic bag and seal.
3Refrigerate.
4Turn over once a day for 5 days.
5Remove and dry with a paper towel.
