Lucy's salmon soup

Ingredients:
4 tbspButter
1 cupChopped onion
1/4 cupChopped celery
1 cupDiced potatoes
1/4 tspWhite pepper
1 1/4 tspThyme
1/4 tspDillweed
2 tbspFlour
1/8 ozCan stewed tomatoes
3 cupMilk
7 3/4 ozCanned salmon
2 tbspParsley
1 cupGrated monterey jack cheese
Procedures:
1Melt 2 tablespoons butter, saute celery and onions.
2Add potatoes and enough water to cover simmer until potatoes are tender.
3Melt remaining 2 tablespoons butter; blend in 2 tablespoons flour to make a roux.
4Add roux and evaporated milk to potatoes.
5Heat until thickened over medium heat stirring constantly.
6Add seasonings, salmon and tomatoes.
7Heat until steamy.
8Do not boil.
9Add cheese just before serving.
