Mandarin shrimp and vegetables

Ingredients:
3 cupBroccoli florets
1 Red bell pepper
1 Yellow bell pepper
4 Green onions, sliced
1 lbsLarge shrimp, peeled and
-deveined
1/2 cupOrange marmalade
1 tbspChopped garlic
1 tbspFresh ginger root
3 tbspLow-sodium soy sauce
2 tbspRice wine vinegar
1 tbspTabasco
1 1/2 tbspCornstarch
3 cupHot cooked white rice
Procedures:
1Place broccoli, red and yellow peppers and onion in a 3-quart casserole; cover with lid or vented plastic wrap.
2Stirring midway through cooking, microwave on high 5 minutes.
3Place shrimp on top of vegetables.
4place marmalade, garlic and ginger root in a 2-cup glass measure.
5Microwave on high 40 seconds, or until marmalade melts.
6Pour over shrimp; re-cover.
7Stirring midway through cooking.
8Microwave on high 4-5 minutes.
9in same glass measure, combine soy sauce, vinegar and tabasco.
10Blend in cornstarch.
11Drain liquid from casserole into cornstarch mixture.
12Stirring midway through cooking, microwave on high 1-2 minutes, or until mixture thickens.
13Stir into shrimp mixture.
14Serve over hot rice immediately.
