Mendocino sole

Ingredients:
D/L FROM: New Mexico BBS
8 xFillets of sole
1 tspMinced onion
1 tspLemon juice
1/2 cupDry white wine
1 cupSeedless grapes
1/4 cupCognac
2 tbspButter
2 tbspFlour
1 cupCream
1/2 tspMixed vegetable seasoning
Procedures:
1Wash and dry sole.
2Set fillets in baking dish, side by side.
3Sprinkle on minced onion, lemon juice, and wine.
4Cover and bake 15 minutes at 350 degrees.
5Meanwhile, slightly bruise grapes and marinate in cognac.
6Make a sauce of butter, flour and cream; add mixed vegetable seasoning.
7Combine sauce with grapes and cognac.
8Pour over sole fillets and return to oven for 5 minutes.
