Meatloaf stuffed with ham and cheese

Ingredients:
1 1/4 lbsGround sirloin
1 largeOnion, finely chopped
1 tspPrepared mustard, preferably
-Dijon
1 canTomato soup (10 ?oz)
2 tbspChopped fresh parsley
1 Green bell pepper, finely
-chopped
2 largeEggs, lightly beaten
1 cupPlain bread crumbs
1/8 tspSalt
1/8 tspBlack pepper
1 Garlic clove, minced
1/2 tspDried oregano
STUFFING
6 sliceBoiled ham (thin slices)
1 cupMozzarella cheese
TOPPING
1 tbspAll-purpose flour
3 sliceMozzarella cheese
Procedures:
1Preheat oven to 400°F.
2Lightly oil a 9x5x3" pan.
3In a large bowl, combine the meatloaf ingredients, adding more bread crumbs if necessary, a tablespoon at a time, to make a firm loaf.
4Lightly spray a large piece of aluminum foil.
5Place the meat mixture on the foil, and form into a 12x8" rectangle.
6Arrange the ham on top of the meat, leaving a small margin around the edges.
7Sprinkle shredded cheese on top of the ham slices.
8Starting from the short end, carefully roll the meat mixture jelly-roll style.
9Seal the edges and ends.
10Place the loaf seam side up in the prepared pan.
11Sprinkle the top of the meatloaf with the flour.
12Bake 1 hour or until done.
13The center of the loaf will be pink because of the ham.
14Top the loaf with slices of cheese, then return to the oven for 5 minutes, or until the cheese melts.
15(option: broil the loaf to melt the cheese.
