New england fish chowder

Ingredients:
1 lbsCod fillet, skinned
1 cupSavoury Biscuit crumbs
8 ozOnion, finely chopped
4 ozButter
1 lbsPeeled Potatoes
1 pintMilk
Salt and Pepper
2 tbspChopped, fresh parsley
Procedures:
1Cut the cod into 1-inch pieces.
2Fry half the biscuit crumbs and onion gently in 2 oz butter until the onion has softened.
3cut the potatoes into half inch dice, put into a large saucepan with the milk and boil gently for 10 minutes until the potato is just cooked.
4Add the fish, onion mixture, the rest of the butter and season generously.
5bring back to the boil and simmer for five to six minutes more until the fish is cooked.
6To serve, spoon into bowls and serve with the remaining crumbs and chopped parsley sprinkled over the top.
