Ingredients:

| tsp | Dijon mustard, fresly gr. | | 1

| tbsp | Olive oil | | 2
| tbsp | Chives, chopped | | 1
| x | Salt, to taste | | 1 1/2
| lbs | Sea scallops | | 2
| tsp | Orange zest, finely grated |

Procedures:
| 1 | Hi all, this was in the parade section of last sunday"s paper by rossi & lukins. | | 2 | Looks great and healthy. | | 3 | Remove tough stems from spinach, rinse well. | | 4 | Soak & clean thoroughly. | | 5 | Shake off water and put in a pot with lid. | | 6 | In a small bowl, combine orange juice, mustard & pepper. | | 7 | Whisk well. | | 8 | Slowly drizzle in xtra v. | | 9 | Olive oil., whisking well. | | 10 | Stir in 1 t. chives; season with salt. | | 11 | Set dressing aside. | | 12 | Place the pure olive oil in a large nonstick skillet. | | 13 | Over medium heat, add half the scallops. | | 14 | Cook 4 to 5 min, or until they are opaque and lightly golden, shaking the pan and turning scallops once. | | 15 | Proceed with the second batch. | | 16 | Keep warm. | | 17 | While scallops are cooking, wilt the spinach over medium heat about 3 min., covered, stirring once. | | 18 | When scallops are finished, drain the spinach well and set in the center of a large serving plate. | | 19 | Pull spinach apart a bit with 2 forks so it comes close to the rim. | | 20 | Center scallops attractively atop the spinach. | | 21 | Pour the orange dressing over all and garnish with remaining chives and the orange zest. | | 22 | Serve immediately. | | 23 | Per serving: 202 calories, 10g. | | 24 | Fat, 37 mg. | | 25 | Cholesterol |
