Ingredients:
1 1/2 lbsLean Ground Beef
1 cupBananas, Ripe, Mashed, 2 Lg
1/2 cupGreen Bell Pepper, Chopped
1 tspMustard, Prepared
1/8 tspAllspice
2 tbspOnion, Chopped
1 Egg, Lg
1/2 cupOats, Quick Cooking
1 tspSalt
1/4 tspNutmeg
2 Slices Bacon
3 tbspOrange Marmalade
Procedures:
1Heat the oven to 350 °F.
2Mix all of the ingredients, except the bacon and marmalade, together.
3Spread the mixture in an ungreased loaf pan, 9 x 5 x 3-inches.
4Crisscross the bacon slices on the top of the meat mixture and spread the marmalade over the whole thing.
5Bake, uncovered for 1 to 1 ?hours.
6Drain off the excess fat and let stand for 5 to 10 minutes before slicing.
7Note: the bananas add a unique, almost mysterious flavor and a special moistness to this elegant meat loaf
