Oyster dressing

Ingredients:
1/2 cupChopped celery
1 cupChopped onion
1/2 cupChopped fresh parsley
2 tbspOil or shortening
1 cupCooked giblets
2 cupGiblet stock
2 cupCooked rice
3 cupCrumbled dry bread
1 pintChopped oysters & juice
Salt to taste
Cayenne pepper to taste
Procedures:
1Preheat oven to 350°F.
2In a lge.
3Saucepan, saute celery, onions, and parsley in the oil until the onions are clear.
4In a large mixing bowl, combine the giblets and stock with the cooked rice, bread, and oysters w/juice; mix well.
5Add the sald and pepper.
6Pour into a greased medium-sized baking dish and bake for 45 minutes, or stuff a large bird and bake until the bird is done.
7Yield: about 10 cups, or enough to stuff a large hen.
