Lucys three berry lemon tart

Ingredients:
3 tspEggs
3/4 cupSugar, granulated
2/3 cupButter, melted
3/4 cupLemon or lime juice
2 tspGrated lemon rind
1 cupStrawberries
1 cupBlack currants
1 cupRaspberriies
1/2 cupRed current jelly
1 tbspCassis or other liqueur
Procedures:
1Pastry:use the recipe for speedy, pat in pastry and place in flan pan.
2If necessary, brush with egg white before baking.
3Let cool before assembling ingredients.
4Filling:in mixing bowl, beat together eggs and sugar.
5Blend in butter, lemon juice and rind.
6Pour into pie shell and bake in 350 degree oven for 20 to 25 minutes or until filling is set.
7Topping and glaze:it is not necessary to have three fruits--two will do;blueberries can be substituted for black currants.
8Also black coffee can be used instead of cassis.
9Pile strawvberries in centre of pie.
10Surround with currants; finish with raspberries.
11Heat jelly until melted;stir in cassis.
12Brush over fruit.
13Makes 8 servings.
