Ingredients:
8 cupPersimmon puree
1 cupOrange juice
1 1/2 cupHoney
Grated rind of 1 orange
Procedures:
1Combine all ingredients in an enameled or stainless steel kettle and cook over medium-high heat until thick, about 10-15 minutes.
2Ladle into hot jars and seal.
3Process pint jars for 15 minutes in boiling water bath.
4Makes about 5 pints.
