Ingredients:

| cup | Persimmon pulp | | 2 1/2
| cup | Sugar | | 2
| | Eggs | | 2
| cup | All-pupose flour | | 2
| tsp | Baking powder | | 1/2
| tsp | Cinnamon | | 1/4
| tsp | Vanilla | | | Pinch of salt | | 2 1/2
| cup | Milk | | 4
| tbsp | Melted butter |

Procedures:
| 1 | Stir baking soda into persimmon pulp. | | 2 | Add sugar and eggs; beat well. | | 3 | Add flour, baking powder, cinnamon, vanilla and salt; stir to combine. | | 4 | Stir in milk and melted butter. | | 5 | Pour into a well-oiled 9-by-13 inch baking pan and bake 55 minutes at 325 degrees. | | 6 | The pudding will poof up but will fall when it"s removed from the oven. | | 7 | Serve with either whipped cream or caramel sauce. |
