Ingredients:
1 lbsBeef flank steak
2 tbspVegetable oil
1 tspGround cumin
1 tspDried oregano leaves
1 Garlic clove, crushed
1 Red or green bell pepper
-- cut into thin strips
1 medOnion, cut into thin wedges
1 Jalapeno peppers, *
-- thinly sliced
3 cupThinly sliced lettuce
Procedures:
1Preparation time: 25 minutes Cut beef steak into 1/8 inch thick stips Combine oil, cumin, oregano and garlic; reserve half Heat half the seasoned oil in large non-stick skillet over medium-high heat.
2Add bell pepper, onion and jalapeno pepper; stir-fry 2 to 3 minutes or until crisp-tender.
3Remove and reserve.
4In same skillet stir-fry beef strips (?at a time) in remaining oil 1 to 2 minutes.
5Return vegetables to skillet and heat through.
65.serve beef mixture over lettuce.
7*1 or 2 jalapenos may be used.
8Remove interior ribs and seeds if a milder flavor is desired.
9Recipe may also be prepared using beef top sirloin or top round steak cut 1 inch thick.
10Serving suggestion: corn bread twists.
