Ingredients:
1 lbsRound steak
2 tbspLard
2 Potatoes, sliced
8 Green chiles, roasted &
-peeled
2 smallOnion, sliced
1 cupTomatoes, cooked
1 clGarlic, finely chopped
1 tbspVinegar
1 tspSalt
1/8 tspPepper
1 tbspFlour
Procedures:
1Recipe by: western mexican cookbook rub vinegar on both sides of the meat.
2Pound in garlic, salt, pepper, and flour.
3Cut into small pieces.
4Brown in hot lard.
5Cook until meat is tender.
6Add vegetables; season to taste.
7Cover.
