Ingredients:
3 lbsGround beef
1 lbsGround pork
1/2 tbspBacon fat or
5 Precooked strips of bacon
Crushed
1/5 cupSugar
1/8 cupDark brown sugar
1 tbspBeef soup base
1/2 tspInstant coffee or
1/2 cup-real coffee
1 cupChopped celery
1 tspThyme
2 tspSalt
1 tspCummin seed
1 tspGarlic, powder or minced
1 tbspCocoa
2 Bay leaves
1 tspCilantro
1/2 tbspMexican oregano
1 tspTabasco or
1 tspCayenne pepper (+/-to taste)
2/5 cupChili blend
2 tbspPaprika
1 canV-8 juice, (48 oz. ea)
1 cupChopped onion
1/2 cupGreen and red peppers
Chopped
1 canStewed tomatoes (16 oz. ea)
Procedures:
1Brown pork and beef, and drain very well.
2Add all ingredients to large crock pot and cover.
3Cook on high for 4 - 6 hours or low for 8 - 12 hours.
4The longer it cooks, the thicker it gets.
5Cubed roast or steak may be substitiuted for the ground meat.
6Note: this can be cooked on top of the stove.
7Brown pork and beef, then cook onions until they become limp.
8Add all of the other ingredients first.
9Cook and mix for 5 minutes add meat last cover and cook on low for at least 4 hours.
10Stir every 10 to 15 minutes.
