Peanut soup with okra croutons

Ingredients:
SOUP
1/2 tbspPeanut oil
1/4 tspCrushed red pepper flakes
1/2 tbspCoriander seeds
1/2 cupCelery, diced
1/2 cupCarrot, diced
2/3 cupButternut squash, diced
2/3 cupPotatoes, diced
1 cupPeanuts, roasted, shelled &
- unsalted
6 cupStock
1 tbspLemon juice
Salt & pepper
OKRA CROUTONS
1 1/2 cupOkra, thinly sliced
3 tbspCornmeal
1/4 tspCumin
1/4 tspCayenne
1/4 tspHerbal salt
Olive oil spray
Procedures:
1Place oil, pepper flakes & coriander in a large non-stick pot & fry over moderate heat until the seeds begin to darken.
2Add vegetables & peanuts & cook for 3 minutes.
3Pour in the stock & bring to a boil.
4Cover, reduce heat & simmer 30 minutes.
5Cool slightly & puree.
6Gently reheat, add lemon juice & season to taste.
7Serve in shallow bowls garnished with okra croutons.
8croutons: prehaet oven to 375°F.
9Rinse okra under running water, drain & pat dry with paper towels.
10Combine cornmeal, seasonings, salt & okra in a bag.
11Seal & shake well.
12spray a baking sheet with oil, spread okra slices in a single layer & spray them with oil too.
13Bake until crisp & browned, spraying & stirring twice during cooking.
14Should take 30 minutes.
