| 1 | In food processor, shred carrot. |
| 2 | Add remaining ingredients except for the tomato paste. |
| 3 | Process until blended. |
| 4 | Invert a 6 oz custard cup in center of a 9" glass pie plate. |
| 5 | Shape mixture into a ring around cup. |
| 6 | Spread the tomato paste over the top of the meat loaf. |
| 7 | Cook in microwave on high 15 minutes or until juices run clear. |
| 8 | Pour off any fat from dish before slicing |
