Ingredients:

| tbsp | Margarine | | 1/3
| cup | Diced onions | | 2
| tbsp | Fine diced green onions | | 1/2
| cup | Celery cut into ? pcs | | 1/4
| cup | Diced ham | | 6
| cup | Water | | 5
| each | Chicken bouillon cubes | | | 5 ea beef bouillon cubes | | 1/2
| cup | Green pepper, cut up | | 1
| can | 16 oz. tomatoes, diced | | 2
| tsp | Salt | | 4
| oz | Tripe, cooked and julienned | | 1
| cup | Cooked rice |

Procedures:
| 1 | Heat margarine in a large saucepan. | | 2 | Add onions, leeks, celery and ham. | | 3 | Saute, stirring, until vegetables are tender. | | 4 | Add water and bouillon cubes and cook until bouillon cubes are dissolved. | | 5 | Add remaining ingredients and simmer for 5 minutes. | | 6 | Makes 9 cups. |
