Ingredients:
1 cupWater
1 cupUndiluted condensed chicken
-broth
1 cupTomato juice
1 cupPeeled fresh or canned
-tomatoes, diced (with
Juices)
1 smallOnion, sliced
1 Bell pepper, chopped
1 Clove garlic, minced
3/4 tspDried basil
3/4 tspDried oregano
4 Thin rounds Italian bread
-toasted
4 slicePart-skim-milk mozarella
-cheese (1 ounce each)
Procedures:
1Preheat oven to 400°F.
2In a saucepan combine all ingredients except bread and cheese.
3Simmer for 30 minutes.
4Spoon into 4 oven-proof soup bowls.
5Float bread round in each bowl and top bread with cheese slices.
6Place bowls on baking tray and heat in oven until the cheese melts.
7Use oven mitts to remove and serve, cautioning diners about heat of bowls.
