Ingredients:
1 cupFlour
1 cupWhole wheat flour
1/2 tspSalt
1/2 tspBaking soda
2 tspBaking powder
2/3 cupDry non-fat milk powder
1/3 cupOatmeal
1/2 cupBrown sugar
1/2 cupChopped peanuts
1/4 cupChopped walnuts
1/2 cupRaisins
1/3 cupChopped prunes
3 Eggs
1/2 cupOil
1/2 cupMolasses
3/4 cupOrange juice
1 cupMashed banana
Procedures:
1Preheat oven to 325°F.
2Combine flour, salt, baking powder, baking soda, milk, oats, sugar, nuts, raisins and prunes in large bowl.
3Blend with fork.
4Beat eggs until foamy.
5Add oil, molasses, juice and bananas.
6Add mix to dry ingredients.
7Pour into 2 8x4 greased loaf pans.
8Bake at 325°F one hou( for muffins, grease tins and fill 2/3 full, bake 350°F for 20 minutes)cool slightly before removing from pan.you may substitute raw chopped apples, grated carrots, applesauce or grated zucchini for bananas.
