Ingredients:
1 lbsBeef [for stewing]
2 cupWater [boiling]
1 tspSalt
4 cupApples [chopped]
1/2 packRaisins [seeded]
1 packRaisins [unseeded]
1 cupOrange peel [grated]
1 cupCitron
1/2 lbsSuet [chopped]
1 cupMolasses
1 cupSugar
2 cupCoffee [prepared strong]
1 cupCider (or fruit juice)
1 tspCinnamon
1 tspNutmeg
1/2 tspCloves [ground]
1/2 tspAllspice
Procedures:
11) simmer beef in water and salt `til very tender, drain & reserve stock and chopped meat.
22) combine in a large kettle the meat, the remaining ingredients, and 1 cup of the beef stock, stirring over low heat `til thoroughly mixed.
33) continue cooking over low heat for about 2 hours or most of the liquid is absorbed, stirring occasionally during cooking and more often as mixture thickens.
