Ingredients:
4 Beef Tenderloin Steaks
-- cut 1" thick
2 tspOlive oil
8 ozMushrooms, finely chopped
3 tbspDry red wine
3 tbspFinely chopped green onions
1/4 tspDried thyme leaves
1/4 tspSalt
1/8 tspPepper
6 Phyllo dough sheets
-- defrosted
Vegetable cooking spray
Procedures:
1Heat oven to 425 °F.
2In large non-stick skillet, heat oil over med-high heat.
3Add mushrooms; stir until tender.
4Add wine; cook 2-3 min. stir in green onions, thyme, salt and pepper.
5Remove from skillet; cool.
6Place steaks in skillet; cook 3 minutes over med-high heat, turning once.
7(steaks will be partially cooked.
8Do not overcook).
9Season with salt and pepper as desired.
10On flat surface, layer phyllo dough, spraying each sheet thoroughly with cooking spray.
11Cut stacked layers to make 4 equal squares.
12Place about 2 tbsp. of mushroom mixture in center of phyllo squares.
13Place steaks on mushroom mixture.
14Bring together all 4 corners of phyllo dough; twist tightly to close.
15Lightly spray each with cooking spray; place on greased baking sheet.
16Immediately bake in preheated over 9-10 min. or until golden brown.
17Let stand 5 min. serve immediately.
18Serving suggestion: twice baked potatoes and sauteed asparagus with red bell pepper strips.
19Serves 4 in 40 minutes.
