Ingredients:

| tbsp | Olive oil | | 1
| cup | Onions, chopped | | 1
| tsp | Garlic, chopped | | 1 1/2
| quart | Chick | | | Salt and pepper | | 1 1/2
| cup | Cooked rice, , rinsed | | 1
| small | Radicchio -, thin strips | | 3
| oz | Julienned prosciutto | | 1
| tbsp | F resh sage chopped | | 1/2
| cup | Parmesan cheese grated |

Procedures:
| 1 | Recipe by: essence of emeril show in a medium soup pot, heat the oil until very hot. | | 2 | Add the onion and cook, stirring constantly for 4 minutes. | | 3 | Add the garlic and cook for 1 minute. | | 4 | Add the stock, bring to a boil, reduce heat and simmer for 20 minutes. | | 5 | Add the rice and simmer for 3 more minutes. | | 6 | Season to taste with salt and pepper. | | 7 | Remove from the heat. | | 8 | To serve, place ?cup radicchio 1 tablespoon prosciutto, ?teaspoon sage, and 1 tablespoon parmesan cheese into each of your soup bowls. | | 9 | Then ladle the hot soup over the garnishes. | | 10 | yield: 6 serving |
