Rice & endive soup

Ingredients:
1 cupUncooked rice
1 1/2 cupChopepd onions
2 Celery stalks, sliced
2 smallCarrots, peeled & cut into
-- half moons
3 tbspOlive oil
3 cupVegetable stock
10 Ripe plum tomatoes, chopped
-- or 28 oz can whole plum
-- tomatoes, crushed
1 Head curly endive, chopped
1/2 cupChopped fresh parsley
1 1/2 tbspChopped fresh basil
Salt & pepper
Procedures:
1Cook the rice.
2meanwhile, saute the onions, celery & carrots in the olive oil till tender.
3Add the stock & tomatoes & endive.
4Simer for about 15 minutes.
5Stir in the cooked rice.
6Add parsley & basil.
7Season with salt & pepper to taste.
