Old fashioned apple butter

Ingredients:
12 ea Apples, pref. jonathan or
2 cupApple juice
1 xSugar (for measurements see
1 xCinnamon (for measurements
1 xAllspice (for measurements
1 xCloves (for measurements se
1/2 cupSauterne (optional)
Procedures:
1Wash, core and quarter apples (do not peel).
2Combine apples and juice in lightly oiled crock-pot.
3For each pint of sieved cooked fruit, add 1 c. sugar, 1 tsp. cinnamon, ?tsp. allspice and ?tsp. cloves; stir well.
4Cover and cook on high setting for 6 to 8 hours, stirring about every 2 hours.
5Remove cover after 3 hrs.
6To allow fruit and juice to cook down.
7Add sauterne for the last hour of cooking.
8Spoon into hot sterilized jars and process in boiling water bath; seal.
9Makes about 5 (?pint) jars.
