Ingredients:
1 tbspButter
2 tbspChopped chives
2 tbspMinced chervil
2 tbspMinced sorrel
1/2 tspFinely cut tarragon
1 cupFinely chopped celery
4 cupChicken broth
Salt and pepper to taste
Sprinkle sugar
6 Slices white toast
Dash nutmeg
Grated cheddar cheese
Procedures:
1Melt butter in skillet, then add herbs and celery and simmer for 3 minutes.
2Add broth and seasonings.
3Cook gently for 20 minutes.
4Place sliceds of toast in tureen and pour soup over them.
5Add nutmeg and sprinkle with grated cheese.
6Serve very hot.
7Makes 4-6 servings.
