Ingredients:
1 lbsBeef flank or round steak
2 tbspCorn oil
1/4 cupSlivered orange peel
1 clMinced garlic
1/2 tspGround ginger
2 tbspCorn starch
1 cupCool beef broth
1/4 cupSoy sauce
1/4 cupDry sherry
1/4 cupOrange marmalade
1/2 tspCrushed dried red pepper
Procedures:
1In wok medium heat oil: add meat 1/3 at a time.stir fry 3 minutes or until browned.
2Return all beef to wok.
3Add: peel, garlic and ginger.
4Stir fry 1 minute.
5Stir together: corn starch, beef broth, soy sauce, sherry, marmalade and pepper.
6Stir into beef.
7Stirring constantly, bring to boil over medium heat.
8Boil 1 minute.
9Serve over rice.
