Ingredients:
1 lbsBeef flank steak
-sliced thin across
-the grain
1 tbspLight soy sauce
1 tbspDry sherry
1 pinchSugar
Black pepper, freshly
-ground, to taste
2 tbspOyster sauce
3 tbspPeanut oil
1/2 tbspSesame oil
2 eachGreen onions, slice
-Chinese style
1/2 eachHead iceberg lettuce
-shredded
1/8 cupChicken stock
Procedures:
1Marinate the beef in the soy sauce, wine, sugar, black pepper, and oyster sauce for 15 minutes.
2Heat a wok and add 1 ?t of the peanut oil.
3Chow the meat quickly on high heat, about 3 minutes.
4Remove from the pan to a serving bowl.
5Heat the wok again and add another 1 ?t peanut oil.
6Add the sesame oil and green onions, and chow for a moment.
7Add the lettuce and return the meat to the wok.
8Add the chicken stock and cook for a moment while a sauce forms.
