Pasta with szechwan peanut dressing

Ingredients:
8 ozPasta (preferably linguine)
2 cupBroccoli florets
SZECHWAN PEANUT DRESSING
MAKES ?CUP
1/3 cupPeanut butter(smooth/chunky)
1/2 cupHot vegetable stock or water
1 tspSoy sauce
2 tbspRice vinegar
2 tbspSafflower oil
2 xCloves Garlic, minced
1/2 tspDry crushed red pepper
Procedures:
12 cups cherry tomatoes garnish: chopped scallion, optional bring large pot of water to boil; cook pasta until al dente.
2While pasta is cooking, steam broccoli florets.
3In a med mixing bowl, whisk together peanut butter and stock or water until smoooth.
4Stir in remaining dressing ingredients.
5When pasta is done, drain well.
6Pour sauce over pasta; toss to coat well.
7Add broccolli and tomatoes; toss again.
8Garnish with chopped scallions.
94 ~ 6 servings variations: - add more red pepper to taste : - try szechwan peanut dressing as a warm topping on steamed vegetables, especially on green beans,broccoli, or cauliflower - make extra dressing to refrigerate and serve later on : chilled steamed green beans or broccoli
