Yan jian rou (chili pork)

Ingredients:
1 lbsLean pork
1 tbspLight soy sauce
2 tbspRice wine or dry sherry
1 pinchSalt
2 tspSesame oil
3 tbspPeanut oil
8 ozFresh mild chiles
3 tbspFinely chopped garlic
1 tspRed chili powder
-=OR=- Cayenne pepper
1 tspSichuan peppercorns, roasted
- and crushed
3 tbspWater
1 tbspLight soy sauce
2 tspSugar
Procedures:
1Cut the pork into 3-inch thin slices and combine with the soy sauce, 1 tablespoon rice wine, salt and sesame oil.
2Cut the chiles in half lengthwise and seed them.
3Heat a wok or large saute pan until it is hot.
4Add 1 ?tablespoons of peanut oil and the pork, and stir-fry for 1 minute.
5Remove the pork with a slotted spoon.
6Reheat the wok and add the remaining oil.
7When it is very hot, add the fresh chiles, garlic, chili powder or cayenne and peppercorns, and stir-fry for 30 seconds.
8Then add the water, 1 tablespoon rice wine, soy sauce and sugar, and cook for another 30 seconds.
9Return the meat to the wok and heat through.
10Give the mixture several good stirs, turn onto a platter, and serve.
11Serves 4 as part of a chinese meal or 2 as a single dish.
