| 1 | Prepare a wood or charcoal grill and let it burn down to embers. |
| 2 | Rub the chickens with the barbecue rub. |
| 3 | Let sit in the refrigerator for 1 hour. |
| 4 | On the grill place the chickens, on the side with no fire. |
| 5 | Cover the grill and vent slightly. |
| 6 | Cook for 3 hours or until chickens are cooked through. |
| 7 | Southern rub: 2 tablespoons salt 2 tablespoons sugar 2 tablespoons brown sugar 2 tablespoons ground cumin 1 tablespoon ancho chile powder 1 tablespoon pasilla chile powder 1 tablespoon freshly cracked black pepper 1 tablespoon cayenne 4 tablespoons paprika mix all ingredients together well. |
