2 Frying chickens, cut up
3 tbspSalt
2 tbspBlack pepper
1 tbspCayenne
2 cupFlour
Oil
Procedures:
1Blend the salt, pepper, and cayenne together.
2Rub down the chicken pieces with the salt and pepper mix and put in a covered container in the frig for several hours to give the pepper time to penetrate the chicken.
3Rub the seasoned chicken pieces with flour.
4Heat the oil to 350°F and add the chicken.
5Do not crowd the pan.
6Fry on each side until golden brown and the chicken is cooked completely through, about 10 mins.
7Drain on paper.
