Gingered chicken livers on stir fried rice

Ingredients:
8 ozChicken livers
Procedures:
1Marinade: 1 clove garlic, crushed 1 tsp fresh root ginger, grated ?level tsp caster sugar 1 tbsp soy sauce few drops sesame oil rice: 3 tbsp oil, preferable sesame 2 oz button mushrooms, sliced ?red pepper, de-seeded and diced 4oz bean sprouts 2 oz peas 4oz long grain rice, cooked until just tender 2 tbsp soy sauce 2 level tsp cornflour oil for frying spring onions, to garnish wash and drain the chicken livers.
2Dry on kitchen paper and trim into 1 inch pieces.
3Mix the marinade ingredients and add the livers.
4Leave to stand for 15 minutes.
5Heat the oil in a frying pan or wok.
6Add the mushrooms, pepper and beansprouts and cook for 2-3 minutes, until the mushrooms are tender.
7Add peas, rice and soy sauce, and cook for a further 2 minutes.
8Keep warm.
9Toss livers in cornflour and fry over a high heat for 5 minutes, stirring.
10Thread on wooden cocktail sticks and serve with rice.
11Garnish with spring onion.
