Ingredients:

PRESSURE COOKER COOKBOOK
1/3 cupOlive oil
1 largeOnion, diced
2 clGarlic, crushed
2 1/2 lbsTo 3-lb. chicken, cut into
-8 pieces
4 cupChicken broth or stock
2 cupLong grain white rice
1 tbspBrown sugar
1/4 cupTomato paste
2 tspSalt
1/2 tspWhite pepper
1 tspDried oregano
1/2 tspGround fennel
2 Bay leaves
Procedures:
1In pressure cooker, heat oil.
2Add onion and garlic and saute in hot oil over med-high heat 2 mins.
3Add chicken pieces and cook 2 mins., stirring occasionally.
4Stir in broth, rice, brown sugar, tomato paste, salt, pepper, oregano, fennel, and bay leaves.
5Secure lid.
6Over high heat, develop steam to high pressure.
7Insert a heat diffuser between pan and heat.
8Reduce heat to maintain pressure and cook 9 mins.
9Release pressure accdg.
10To manufacturer"s directions.
11Remove lid.
12Shake chicken and rice mixture well and stir to distribute cooking liquid.
13Discard bay leaves
