3/4 lbsGround chicken breast
Skinless -- cooked
1/4 cupBread crumbs
1 Egg white -- whipped
1/4 cupSkim milk
1/2 cupOnions -- chopped
1/2 cupBell peppers -- chopped
1 tspSalt
1/2 tspBlack pepper
1/4 tspDry mustard
1/2 tspOlive oil

10 1/2 ozLow-fat cream of mushroom
Soup
3/4 cupSkim milk
2 cupFrozen mixed vegetables --
Thawed
MEATBALL MIXTURE
SAUCE MIXTURE
Procedures:
1To prepare meatball mixture, combine chicken, bread crumbs, egg white, ?cup skim milk, onions, bell peppers, salt, black pepper, and dry mustard.
2Form into 12 balls.
3In a skillet, heat oil over medium heat.
4Add meatballs and brown on all sides.
5Place balls around edge of skillet.
6To prepare sauce mixture, combine cream of mushroom soup, remaining milk, and mixed vegetables.
7Pour into center of skillet.
8Simmer for 12 minutes and serve.
